Gem Lettuce Wedges with Sundried Tomato Caesar Dressing

With this salad, it's all about the Sundried Tomato Caesar Dressing. The dressing is made a little lighter than traditional caesar dressing, nixing the mayo and using sundried tomatoes to boost the flavor. Adorable little gem lettuces cut in half make for the perfect side salad. Serves 4 to 8 in 15 minutes.

Ingredients

FOR THE DRESSING:

  • 1/2 cup sundried tomatoes packed in olive oil
  • 1/2 cup freshly and finely grated Parmesan cheese
  • 2 tablespoons slivered almonds
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon champagne vinegar or white wine vinegar
  • 2 splashes Worcestershire sauce
  • 1 clove garlic
  • 1 pinch red pepper flakes
  • 1 pinch kosher salt
  • freshly ground black pepper
  • 1/4 cup water or more as needed to thin dressing

FOR THE SALAD:

  • 4 heads gem lettuce
  • parmesan cheese
  • croutons optional

Instructions

MAKE THE DRESSING:

  • Add ingredients to a food processor and process until combined. Add water as needed to thin out.
  • Store in an airtight container and refrigerate for up to 2 weeks.

MAKE THE SALAD:

  • Arrange wedges on platter. Top with cheese and croutons (if using) drizzle with dressing.
