Cilantro Lime Cauliflower Rice

This Cilantro Lime Cauliflower Rice is a healthy alternative to rice. It's bursting with flavor from fresh garlic, lime and cilantro and takes a fraction of the time it takes to cook regular rice. Serves 4 in 10 minutes

Ingredients

  • 1 medium cauliflower cut into florets
  • 2 cloves garlic finely minced
  • 1 lime juiced
  • 1 handful cilantro roughly chopped
  • kosher salt to taste

Instructions

  • Rinse the cauliflower florets under water and pat dry with paper towel or a clean kitchen towel. Place the florets into your food processor, fitting with the blade attachment and pulse until it resembles rice.
  • Add the cauliflower and minced garlic into a deep-sided, non-stick skillet. Heat on medium, stirring constantly until the cauliflower is tender and the garlic is cooked and fragrant. Add in the lime zest and juice and stir to distribute the zest. Lastly, add in cilantro and a pinch of kosher salt, to taste before serving.
