This creamy Cilantro Lime Avocado Dressing is simple, fresh and flavorful. Ripe avocados are blended with greek yogurt, cilantro, lime juice, green onion and garlic until creamy and smooth. Use as a dressing for salad, slaw and grilled or roasted vegetables.
Yields about 1-1/4 cups or about 10 (2 tablespoon) servings.

Ingredients

  • 1 cup cilantro
  • 1/4 cup plain nonfat greek yogurt
  • 1 small avocado about 2 ounces
  • 2 green onions roughly chopped
  • 1 large clove garlic smashed and peeled
  • 1 small lime zest and juice
  • 2 tablespoons avocado oil
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons honey
  • 1/2 teaspoon kosher salt
  • 2 to 4 tablespoons water or as needed for desired consistency

Instructions

  • Into a blender measure and add cilantro, plain nonfat greek yogurt, avocado, green onions, garlic, lime zest and juice, avocado oil, apple cider vinegar, honey and salt.
  • Blend, adding water (tablespoon at a time) until a desired consistency is reached.
  • Taste and add more salt if desired.
