Salted Snickers Stuffed Dates

Salted Snickers Stuffed Dates are better for you version of the classic candy bar. Dates are filled with creamy peanut butter and chopped salted peanuts, dipped in chocolate and sprinkled with fleur de sel. The dates lend the caramel flavor and sweetness that pairs perfectly with the chocolate and peanut butter.
Yields 10 chocolate covered dates.

Ingredients

  • 10 medjool dates pitted
  • 2 tablespoons peanut butter or nut or seed butter of choice.
  • 2 tablespoons chopped peanuts
  • 1 cup milk chocolate or chocolate of choice
  • 1 teaspoon (heaping) coconut oil
  • fleur de sel or use more finely chopped peanuts
  • thoothpicks

Instructions

  • Slice each date along one side and remove the pit.
  • Fill each date with about 1/2 teaspoon peanut butter or with a nut or seed butter of choice and top with some chopped peanuts.
  • Then insert a toothpick and repeat with the rest of the dates
  • Next, in a bowl set over a pan of shallow simmering water, add the milk chocolate chips plus coconut oil. Stir until melted.
  • Remove off of the heat and, using the toothpick to hold on to, dip the underneath of a peanut butter stuffed date. Use a spoon to drizzle chocolate over top.
  • Gently but firmly tap on the side of the bowl to remove any excess chocolate.
  • Transfer to a small parchment lined rimmed metal pan. Use another toothpick to hold the date in place as you remove the original toothpick. Repeat with the remaining snickers stuffed dates.
  • Sprinkle with a pinch of flour de set or finely chopped peanuts.
  • Pop the pan into the fridge for 30 minutes to set the chocolate.
